I have made this recipe many times in a home gluten-free kitchen, and it is one of the dishes I rely on when I want dependable texture and flavor. Mix lamb with garlic and all spices. Divide into 8 portions and mould onto skewers.
Grill or pan-fry skewers 10–12 minutes, turning occasionally.
Make salad: combine cucumber, tomatoes, and parsley with lemon and olive oil.
Mix tahini with lemon juice, water, and salt until drizzleable. Serve with kebabs.
