Veggie-Loaded Frittata

Baked eggs with mushrooms, peppers, spinach, and cheese

Ingredients

  • 6.8 eggs
  • 340 g mushrooms, sliced
  • 1.7 bell peppers, diced
  • 170 g spinach
  • 0.85 onion, diced
  • 127.5 g cheddar, grated
  • 1.7 tbsp olive oil
  • Salt and pepper

Instructions

    Preheat oven to 180°C. Fry onion and peppers until soft.

    Add mushrooms, cook 3 minutes. Add spinach until wilted. Season.

    Whisk eggs, pour over vegetables. Scatter cheese on top.

    Bake 20–25 minutes until just set. Slice and serve.
