Falafel-Inspired Chickpea Patties

Crispy patties with tahini sauce and roasted vegetables

Ingredients

  • 2 x 400g canned chickpeas, drained
  • 0.85 egg
  • 2.55 garlic cloves
  • 0.85 tsp cumin
  • 0.85 tsp coriander
  • Fresh parsley
  • 2.55 tbsp GF flour
  • 1.7 tbsp tahini
  • Juice of 1 lemon
  • Salt and pepper

Instructions

    Blend chickpeas, garlic, egg, cumin, coriander, parsley, and flour into a rough mixture.

    Form into 12 small patties. Chill 15 minutes.

    Pan-fry in oil 3–4 minutes per side until golden.

    For sauce: mix tahini, lemon juice, water, salt until smooth. Serve with patties.

💡Tips

  • Chilling the patties helps them hold together during frying.
