Baked Cod with Lemon & Herbs

Flaky cod fillets with fresh herbs, lemon, and roasted broccoli

Ingredients

  • 510 g cod fillets
  • 0.85 head broccoli, cut into florets
  • 0.85 lemon, sliced
  • 2.55 garlic cloves
  • Fresh dill and parsley
  • 1.7 tbsp olive oil
  • Salt and pepper

Instructions

    Preheat oven to 200°C. Toss broccoli with oil and roast 15 minutes.

    Season cod with salt, pepper, herbs, and garlic. Place on top of broccoli.

    Lay lemon slices on cod. Roast 15 more minutes until fish flakes easily.

    Serve immediately with extra lemon.
