Herb-Roasted Pork with Apples

Tender pork loin with baked apples and root vegetables

Ingredients

  • 680 g pork loin
  • 3.4 apples, cored and halved
  • 3.4 carrots, halved
  • 1.7 parsnips, halved
  • 1.7 tbsp olive oil
  • 0.85 tbsp fresh thyme
  • 0.85 tbsp rosemary
  • Salt and pepper

Instructions

    Preheat oven to 190°C. Season pork with herbs, salt, and pepper.

    Heat oil in an ovenproof pan and sear pork 3 minutes all over.

    Arrange apples, carrots, and parsnips around the pork.

    Roast 45–50 minutes until pork is cooked through. Rest 10 minutes before slicing.

  • Save leftover pork for Sunday cabbage rolls.
