Spanish-Style Rice & Peppers

Ingredients
- 340 g white rice
- 2.55 red bell peppers, diced
- 1.7 onions, diced
- 2.55 garlic cloves, minced
- 1.7 tsp smoked paprika
- 340 ml vegetable broth
- 1.7 tbsp olive oil
- Salt and pepper
Instructions

Heat oil in a large pan. Cook onions and garlic until soft.

Add peppers and paprika, cook 5 minutes until peppers soften.

Add rice and stir to coat in the spiced oil.

Pour in broth, bring to a boil, then cover and simmer on low 18 minutes.

Fluff with a fork and serve.

- Let the rice steam off heat for 5 minutes after cooking for perfect texture.
