Vietnamese Pho-Inspired Soup
Aromatic broth with beef, fresh herbs, and rice noodles

Ingredients
- 425 g beef sirloin, thinly sliced
- 255 g GF rice noodles
- 1.27 litres beef broth
- 1.7 star anise
- 0.85 cinnamon stick
- 2.55 garlic cloves
- 0.85 tbsp fresh ginger
- Bean sprouts
- Fresh cilantro, basil, and mint
- Lime wedges and GF soy sauce
Instructions

Simmer broth with star anise, cinnamon, garlic, and ginger for 20 minutes. Strain.

Cook rice noodles per package. Divide among bowls.

Ladle hot broth over noodles. Add raw beef slices — the broth will cook them.

Top with bean sprouts and herbs. Serve with lime and soy sauce.
💡Tips
- The beef must be sliced paper-thin for it to cook in the hot broth.
